The Wine
McWilliam’s had a lot to do with reviving the fortunes of the tiny Hilltops region in NSW. When they acquired the property in the 1980s only a few hectares of vines were left, the rest replaced by cherry trees and grass. Scroll forward to the noughties and the passion for cool climate winemaking in Australia – where high, cool altitudes bring finer, more intense flavours – had taken hold. Our Buyer Dan fell in love with this big red for its honest to goodness Shiraz power combined with delicate fine herb and raspberry complexity – subtleties that come from the cool air of the Great Dividing Range. After six generations in the business, the McWilliam family certainly know their Shiraz, and this one, perfect with roast lamb, is just terrific.
