Founded in 1835, Gonzalez Byass is one of the top houses in Jerez, just awarded 'Best Producer in Spain 2022' by Mundus Vini and also in 2018. The family makes sherry across the range – from amazing, layered Amontillados, to Palo Cortados and Olorosos like luscious Alfonso, to the world-famous, bone-dry Tío Pepe. This rich, complex Oloroso was fermented as a wine to 11°, fortified to 18°, then put into large oak barrels, with plenty of room for oxidising, in the special Alfonso solera system. The wines are aged there around 8 years to develop a glorious array of rich, nutty, fruity, spice flavours, finishing dry. It's a fabulous glass on its own, but is also great with rich meat stews or strong hard cheeses. A sherry to savour slowly.
