The Wine
Fans of our usual Saracosa will be bowled over by the intensity of its big brother, Governo. Suave and seductive, this is a full rounded blend of Sangiovese and Merlot, aged for four months in small oak barrels. What’s more, a portion of grapes were left to dry for 20 days, adding terrific concentration to the wine. It’s an ancient 14th century method known as Governo in Tuscany. We think the wine is nothing short of spectacular – no wonder it has already been awarded a whopping 98 points from Italian wine critic Luca Maroni. The wine is a testament to the talents of Sofia Barbanera, the fourth generation winemaker at this great Tuscan family estate. Decant and serve with a local favourite – rabbit casserole, other game or slow-cooked beef.
