The Wine
Fans of our usual Saracosa will be bowled over by the intensity of its big brother, Governo. Suave and seductive, this is a full, rounded blend of Sangiovese and Merlot, aged for four months in small oak barrels. What’s more, a portion of grapes were left to dry for 20 days, adding terrific concentration to the wine. It’s a method known as Governo in Tuscany, dating from the 14th century. Critics love it as much as our customers do, Luca Maroni awarding it 98 points for the 4th time and Oz Clarke calling it "hedonists' heaven". The wine is a testament to the talents of Sofia Barbanera, whose family has been tending vines, overlooked by the Saracosa hill in Tuscany, since the 1940s. Decant and serve with a rich casserole or slow cooked beef.
