The Cider
Once Upon a Tree was founded in 2007 by Simon Day. A winemaker by training and birth (he was born into an English vineyard), he trained abroad, then returned to Herefordshire and decided he'd apply the same principles to making cider. That was 30 years ago, since when he's won numerous awards. They include BBC R4's Food & Farming Drinks Producer of the Year, plus Overall Champion Trophy winner at the International Cider Awards. Simon sources all his apples from a 90 year old orchard just two miles away, still owned by the same family that planted it. Dabinett is the main variety, with some Ellis Bitters, Brown, Somerset Redstreak and Kingston Black in the blend. Bright, appley and crisp, with a hint of butterscotch. Chill down and enjoy.
