The Wine
Before the introduction of modern technology and cool fermentation in southern France 20 years or so ago, crisp whites from the Languedoc were rare. Then ‘Flying Winemakers’ (mainly from the New World) began appearing in Europe when harvest in the southern hemisphere was all done and dusted, and showed what great results could be achieved by vinification at low temperatures in stainless steel – capturing all the sunny flavours of the grapes just at the peak of ripeness. Sauvignon Blanc is renowned for its grassy gooseberry aroma and zingy citrus fruit – the spirit of this grape and certainly what you’ll find in this appealing white. It’s perfect for sipping on its own any time of the year and spot on too with seafood noodles, fish or salad.
