The Wine
If you love French Sauvignon, then you must try the wines of Pouilly Fumé. The appellation is one one of the Loire's most revered and lies on the easternmost point of the region, in the Central Vineyards. Its vines stretch over 1,200 hectares, about half the size of Sancerre's, next door, making wines that offer a touch more gunsmoke and a little more roundness than its neighbour. Jean Pierre Bailly is a first class example. Patrice is the sixth generation and took over the estate in 2000. He has 17 hectares of Sauvignon planted in some of the finest sites, all on superb kimmeridgean soils, typical of the region. Carefully fermented, the wine is aged on its lees for four months to lend a creamy texture. A fine choice with seafood.
