The Cider
Having put so much effort into cultivating his barley on Diddly Squat farm, Jeremy Clarkson was determined that it be put to good use. So he resolved to look out a good local brewery to turn it into lager. He was introduced to Rick Keene of Cotswold Brewery, who was not only an ace brewer, but shared views on supporting local agriculture. Jeremy was so impressed by the first batch of Hawkstone lager, he decided to invest in the project. They discovered they also had a cider fanatic on board – Kaleb Cooper – so they added one of those to the range. Now fifth-generation cidermaker Guy Lawrence has joined them, fermenting the fresh-pressed juice from local heritage apples with Champagne yeast and maturing it for six months for full flavour.
