The Spirit
Created by the great gin family Giró Ribot, Gin Mare is thoroughly Mediterranean, while its medley of unusual botanicals helps push the boundaries of this spirit. It is crafted in the fishing village of Vilanova, on Spain’s Costa Dorada, close to Barcelona. A chapel where fishermen once prayed for a safe return serves as home for the precious pot still. Ingredients local to the region – Arbequina olives, basil, rosemary and thyme – are added to more traditional juniper, bitter orange peel, sweet Seville orange zest, Lleida lemon peel, cardamom and coriander seed. The citrus element of these botanicals is steeped in spirit for a whole year; the others for a more modest 36-plus hours. A delicious balance of lightness and earthy savouriness.
