The Spirit
History aside, this is very impressive gin. It’s crafted by the Russell family, who had a long-held ambition to produce a premium quality ‘grain to glass’ gin. Making preparations, they visited Edinburgh’s Centre for Brewing and Distilling to scout for talent, poaching Abhi Banik, who was teaching postgrad courses. The family then found a site to build their Copper Rivet distillery: Victorian Pump House No.5 at the disused Chatham Dockyard. They work closely with local farmers to source the finest Kentish grain too. Distillation occurs in ‘Janet’, a handmade copper still, before the spirit is infused with an impressive array of botanicals, carefully blended to exquisite perfection. Serve over ice with tonic and a slice of pink grapefruit.
