The Wine
Château Liversan lies on the borders of the Haut-Médoc’s renowned Pauillac, separated only by a small expanse of woodland and lies very close to the Cru Bourgeois Château Ramage La Batisse. Liversan started as a wine estate in the 18th century, firstly under the ownership of the Marquis de Latresne, a knight of the Order of Malta, then Messieurs Bernet and Ducasse. Today the property boasts 51 hectares, with an unusually high percentage for the Haut-Médoc of Merlot, thanks to its gravel over clay-mix soil. The wine is a rich blend of over half Merlot and Cabernet Sauvignon, traditionally fermented and aged in cask. Stand the bottle upright to allow any sediment to settle, then carefully decant. A great showpiece for a special dinner.
