New York has a long tradition of distilling, with the earliest distilleries dating back to the 1700s. Even during the dark days of Prohibition, it’s estimated there were over 50,000 illicit stills in the city. More recently, new distilleries have been few and far between until in 2011, Tom Potter – co-founder of Brooklyn Brewery – and Allen Katz – one of America’s top spirits and cocktails experts – clubbed together to form the New York Distilling Company. This particular rye is a special bottling from That Boutique-y Whisky Company. This independent bottler specialises in buying interesting casks of spirits from the world’s best distillers to create their own range. A splash of water allows layers of fruity sweetness to unfurl.
