We have known Adam Mason since 1997 when, fresh out of Stellenbosch university, Adam joined the Flying Winemaker team, improving wines in some of France’s outback co-operatives. He impressed us so much, we persuaded him to stay on for a few years to help at our winemaking HQ in Bordeaux.
Eventually, in 2004, he decided to return to the Cape and was immediately snapped up as head winemaker at the legendary Klein Constantia. We were delighted. Since then he has worked at other top wineries too.
In 2022, he decided to go ‘solo’, specialising in his favourite grape – Chardonnay – and crafting just a handful of small batch wines, the crowning glory of which we think is his luscious, Burgundy-style white – Hérisson.

Hérisson vineyards
Adam Mason loves the mineral freshness of ocean-cooled South African Chardonnay. And having consulted for a number of top wineries, he knows just where to get the best grapes for this style.
For his beloved Hérisson, he sources fruit from two special vineyards. One is Vriesenhof in Stellenbosch's Golden Triangle, the vines a mix of a special Burgundy clone from Premier Cru Clos des Mouches and one from Champagne, all planted on an old stony riverbed soil.
His other source of great Chardonnay is from Lutzville, just along the coast to the north. Again, kept cool by strong Atlantic breezes, the grapes produce wine with lovely ripeness balanced by a backbone of mineral freshness.
