About the vineyard
Tony Laithwaite has known Adam Mason since 1997 when, fresh out of college, Adam joined the Flying Winemaker team, improving wines in some of France’s outback co-operatives. Returning to the Cape, he then had a stellar career path, becoming head winemaker at legendary Klein Constantia. Since 2022, he has gone ‘solo’, crafting just a handful of small batch wines, the crowning glory of which we think is his luscious, Burgundy-style Chardonnay – Hérisson.
The wine:
The grapes for Hérisson come from a single vineyard that Adam has been looking after for several years. He knows it’s one of the best – on the south-facing, lower slopes of Stellenbosch mountain, just 13km from the ocean … both ideal for tempering the Cape’s summer heat.
In the cellar, Adam uses wild yeasts, fermenting the juice in large oak foudres and new Chassin oak barrels to get the perfect balance of fruit freshness and creamy oak, with additional lees ageing for added richness.
