The Spirit
Welcome to Thurso, the windswept town on the northern coast of the Scottish mainland that’s home to Wolfburn Distillery. The original distillery was founded by William Smith in 1821 and swiftly became the largest in Caithness. However, by the 1870s production had ended. Fast forward to the 21st century and a new team decided to revive this once great whisky. The old site was nothing more than a pile of stones so they rebuilt 150 metres downstream, where they set about creating a new distillery that would still draw water from the original source, the Wolf Burn. There’s no automation – everything in the distillery is done by hand with skill and care. Non chill filtered and uncoloured, Northland is the first chapter in Wolfburn’s new story.
