The Wine
Paolo Prior is the talented winemaker for this Terra Franca wine. He trained as a 'food engineer', doing a stint in the wine industry and got so hooked, he stayed. Through sheer hard work and dedication, he has proved his worth and since 2000 has been a head winemaker at the Anadia cellar. For his Terra Franca wines, his aim is gorgeous drinkability and value. To this end he blends grapes from different regions. In this case it is Bairrada's thick skinned Baga, with the fruitier qualities of Shiraz and Merlot. The wine is so smooth, supple and fruity, it is thoroughly enjoyable on its own or with everyday suppers – from toad in the hole, shepherd's pie, to barbecued chicken drumsticks or roasted vegetables with couscous. Very moreish.
