The Wine
Bordeaux’s Merlot grape isn’t best known in the Languedoc, but around the beautiful, medieval city of Carcassonne it excels. It thrives in a climate that enjoys full sun, with a lofty freshness from the Atlantic. At the cellar of Les Vignobles de Carsac, winner of medals every year at the prestigious Concours Genéral Agricole de Paris, winemaker Jean-Baptiste Fabre is expert at making a red that is beautifully ripe, yet still retains crunchy fruit freshness. It leaves you wanting just a sip more! Half the batch he vinifies at a higher temperature with a short maceration for colour and fruity flavour. The other half takes it more leisurely, at a lower temperature, for structure. Enjoy with grilled meats, a spicy casserole or tasty pizza.
