The Wine
Founded in 1792 by the Hidalgo family, this sherry bodega is one of the oldest. Run today by the 8th generation, it is world renowned for the superb quality of its sherries. Best known is La Gitana, named after the gypsy barmaid on the label, who captivated customers, including Eduardo Hidalgo, a century back. This style of sherry is like a fino, but aged under thicker flor, is more delicate. Using all Palomino grapes from the family's finest Balbiana and Miraflores estates, it's made only from first-press juice. After fermentation, the wine is fortified to 15% and is aged in the barrels of the solera system, under a natural yeast covering called flor, for 8 years. Chill and enjoy as an aperitif or with seafood, Japanese dishes or nuts.
