The wine’s creator, Parker-praised Hervé Sabardeil, approaches Chante-Clair as a patriotic labour of love. He selects the best grapes he can find, from vineyards and growers he knows and trusts – all old friends across the Languedoc region. Then, having fermented each parcel separately, he assembles the parts to create the perfect balance of ripe, lip-smacking fruit and heady aromas. So come on Francophiles, relive those halcyon holidays with a bottle of Chante-Clair! Spot on with French bistro fare: confit de canard, cassoulet, or a hearty pot-au-feu.
