Yes, you absolutely can serve red wine lightly chilled. It’s a growing trend here in the UK, but chilled red wines have always been a part of the French drinking culture. In fact, holiday anywhere in the Med and you’ll know it’s not at all unusual for your red wine to be served straight from the fridge. Here are our top tips on the best chilled red wines for summer.
Can I chill red wine?
Yes, you absolutely can chill red wine.
In fact, across France and much of the Mediterranean, lightly chilled reds are part of everyday life. Order a glass of red wine on a warm afternoon and there’s a fair chance it’ll arrive cool from the fridge. Sensible, really.
Not every red wine is cut out for the cold, mind you. Leave your treasured old Bordeaux alone. But if you’re a fan of light, juicy reds, they positively love a chill.

Why chill red wine?
A short spell in the fridge can work wonders for the right red wine.
Cooling a red wine slightly helps bring out its fruity aromas and vibrant freshness – 30 minutes in the fridge will make those juicy fruit notes really sing. It can also make a wine feel more refreshing, especially on a warm, sunny day.
That’s why grapes such as Gamay and Pinot Noir are such good candidates. They naturally offer plenty of freshness and fruit, so a gentle chill simply highlights what’s already there.
The 5 best red wineS for chilling
Beaujolais
If there was ever a wine made for chilling, it's Beaujolais. Made from Gamay, its bright, fruity and floral flavours come alive after a quick spell in the fridge. Undoubtedly one of THE best summer red wines for a picnic.
Loire reds
The Loire Valley specialises in red wines with crunch, freshness and plenty of personality. Think Cabernet Franc, Gamay and Pinot Noir … grapes that all thrive with a gentle chill, showing off vibrant berry fruit and herbal notes. Loire reds are seriously food-friendly too – enjoy with salmon, cold meats or herby lamb chops.
Frappato
There are lots of Italian red wines that are delicious lightly chilled – from Valpolicella and Bardolino to Dolcetto and Barbera. But our favourite Italian chilled red wine has to be Frappato. All juicy red berries and super-smooth with effortless drinkability, it will transport you to sunny Sicily in a flash. A great all-round summer red.
Pinot Noir
Chilling your favourite Pinot Noir makes its seductive summer berry fruit pop from the glass and highlights its irresistible silky texture. Even a youthful bottle of red Burgundy benefits from a light chill. The ideal al fresco dining red served with salmon, duck or charcuterie. Not sure which one to choose? Try a selection in our Pinot Noir Mix.
Don't forget sparkling reds
What to serve at your next family barbecue or Sunday brunch? Fresh, frothy and full of flavour, sparkling red wines offer the perfect solution. Top of the pops is The Full Fifteen from Australia, a sparkling red made for summer sipping with its lip-smacking fresh fruit and delicate bubbles.
At what temperature should you chill red wine?
The sweet spot for most chilled reds wines is between 10-15°C.
That’s cool enough to refresh, but not so cold that you lose all those lovely fruit flavours and aromas.
As for how to chill your bottle of red, the easiest method is to pop it in the fridge for around 20-30 minutes before serving. If you're outdoors, an ice bucket will keep it at the perfect temperature without leaving it baking in the sunshine.
You're looking for lightly chilled, not ice cold.
You can find out more in our Wine Temperature Serving Guide, but don’t be afraid to experiment with your favourite red wines. Wine isn’t a rulebook. Even a fuller-bodied style can benefit from a quick blast in the fridge on a hot day.
After all, the best way to enjoy wine has always been the same … however you like it.
