The Wine
Ever wondered where and when wine was born? Many believe it was Georgia around 6,000 BC. In those days grapes were allowed to ferment in clay amphorae (qvevri), largely buried underground. A method, funnily enough, some of the smartest Bordeaux cellars have today returned to. This is a superb fruit-filled red from a cellar founded in 1962, initially to sell wine in bulk. That all changed in 1999 when the Margvelashvili brothers bought and totally revamped it, moving to estate-bottled wines for export. In 2020, their young-style Saperavi won Champion Red Trophy at the IWC. What a coup! This 91-point Saperavi is traditionally fermented, with grape skins and stems, in qvevris buried underground to lend a real depth and freshness to the wine.
