This is a very special Réserve edition, even more delicious than our usual offering. Half the wine is Chardonnay, which was fermented in French oak barrels, then all the wine aged on lees for a full five years before disgorgement. This has resulted in greater richness and complexity in this fine fizz. Laurent Mingaud, the original winemaker of Roche Lacour, is back in charge, working his magic beneath the cool hills of Limoux, where the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531. A very fine celebration bubbly.
