The Wine
Nominated for Wine Enthusiast’s ‘American Winery of the Year’, Paumanok is a regional pioneer, being one of the first to set up on Long Island, in 1983. The potential demand for local wine is, of course, huge – Paumanok being next door to New York City and that movie star hang-out The Hamptons. But such proximity comes at a cost – land can average $50,000 an acre. Luckily for us, this hasn’t deterred the Paumanok team – Ursula and Charles Massoud and their three sons – who have planted Cabernets Franc and Sauvignon, Merlot and Petit Verdot to create Domaine Moraine, a fabulous Bordeaux-style blend. It’s been aged in French oak barrels for 18 months to give smoothness and complexity. Try serving it with rosemary lamb chops or rib of beef.

Serve it to your guests who normally stick to Bordeaux. And be prepared to pour a second glass!
