The Wine
This exemplary 17th century estate is run today by François Servin, along with his Australian brother-in-law, Marc Cameron. Unsurprisingly they manage the estate with a combination of tradition and modernity. They have received much praise – “great elegance, purity and length” wrote critic Andrew Jefford, while Wine Advocate says "these wines deserve to be taken seriously". Each plot is hand harvested and fermented separately to allow its individuality to shine. Mont de Milieu is from hilltop vineyards on the side of the Serein River. Regarded as one of the best Premiers Crus in Chablis, the vineyard produces intense, ripe, focused wines. Fermented and aged in stainless steel, the wine's all about fruit purity with a fine mineral freshness.
