The Story Behind the Bottle
Servin is a superb, 7th-generation family domaine, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation and Neal Martin writing that they “come warmly recommended”. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s son-in-law, Australian winemaker Marc Cameron. Decanter journalist Andrew Jefford describes the wines as having “great elegance, purity and length”. From a vintage that “elicited so much joy from barrel” (Neal Martin), this is a fine Premier Cru with lovely fresh aromas of candied lemon, apple, spice and that saline edge. It has pleasing weight, with a stoney finesse. Youthfully austere, promising much.
