The Wine
Servin is a superb, 7th-generation family domaine, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation and Neal Martin writing that they “come warmly recommended”. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s son-in-law, Australian winemaker Marc Cameron. Decanter journalist Andrew Jefford describes the wines as having “great elegance, purity and length”. From a vintage that “elicited so much joy from barrel” (Neal Martin), this is a fine, youthful Grand Cru that needs time to show at its best. If you can’t wait, decant the wine early and serve in large-bowled glasses. Serve with fine seafood or poultry.
