Flavour Profile
Lying on the right bank of the Rhône, next door to Châteauneuf-du-Pape, Tavel is one of the great crus of the southern Rhône. It was the first AOC for a rosé and to many, it’s the finest rosé in the world. Its hillside slopes boast a mosaic of soils – limestone, gravel, sand and pebbles – which each bring out a different character in the classic Rhône grapes.
The vineyards of Domaine Respelido are the property of second-generation Stéphane Orfila, who started his career in the construction industry but returned home to tend the family vineyards, three hectares of which lie in Tavel.
His prized Respelido rosé comprises three noble grapes – Grenache, Syrah and a little of the aromatic white variety, Clairette. It makes a deeply coloured pink, with intense aromas of strawberry, cherry and redcurrant that follow through to the bright berry taste and the crisp bite of the finish. A delicious wine to serve with salmon, white meats, duck or a Salade Niçoise.
