The Wine
Cyril Audoin is the 5th generation of his family in Marsannay. He grew up on the estate just as the village was gaining greater prominence, culminating in AOC status in 1987. Now the appellation is on the edge of being awarded its own Premiers Crus, too. William Kelley of Wine Advocate wrote that Cyril's superb Marsannay reds "can stand just as proudly among the grander Villages and Premiers Crus of the Côte de Nuits". His estate has nearly 16 hectares of old vines spread across a variety of terroirs. Au Champs Salomon is one of his very best plots, growing his finest Marsannay grapes. Barrel aged, then bottled unfined and unfiltered for maximum flavour, this red's ideal with coq au vin. Ideally open early and decant. Even better, cellar.
