Irish whiskey is today enjoying a renaissance, growing from 4 distilleries in 2008 to the 40 there are today. They are renowned for leading the way with their Single Pot Still distillation which includes a portion of unmalted barley in the mash bill. One of those distilleries is The Whistler in the lush Boyne Valley. The team innovatively take their great Single Pot whiskey, matured in ex-bourbon casks to add that extra layer of vanilla and smoky complexity, and infuse it with the honey from the beehives in their own family orchards. A joy to sip solo, neat or over ice, or to combine into a cocktail or simply add soda.
