Mathieu Kauffmann was the first non Champenois to be appointed head winemaker at Bollinger. He was also the first to resign, rather than retire, from this position. The reason: the remarkable quality of the Von Buhl vineyards – 8 Grands Crus and 6 Premiers Crus. Also, he was rather fond of Riesling! He knew he could make amazing wines there, including a Champagne method fizz. He started with a new team in 2013 and the results speak for themselves. Founded in 1849, the Von Buhl estate itself has an illustrious history, with its wines enjoyed in the most aristocratic circles. Since Mathieu’s arrival, the estate has become biodynamic and quality is phenomenal. The world said you couldn’t use Riesling in fine fizz – he has proved them wrong!
