Bodegas Volcanes celebrates Chile's unique landscape. And more exactly its 1900 volcanoes. A whole book has been written (by John Szabo) on the greatness of wines from volcanic soils, not just from here, but all over the world – Mount Etna, Santorini, Soave and more. That's thanks to the soil's low fertility, high minerality, good drainage and poor organic matter. And due to the dynamic nature of these volcanoes, Chile can boast a very diverse range of soils originating over 300 million years! Pilar Diaz is the winemaker at this exciting cellar. Her rich, velvety Cabernet uses grapes from Cachapoal, where warm days and cold nights draw out the ripening. Nine months in French oak barrels rounds out the wine. Delicious now, but open early.
