The Wine
This great cellar has reached legend status in just over 30 years and its wines are hugely sought-after worldwide. It was founded by the eponymous Grant Burge, the great great grandchild of John and Eliza Burge who arrived in the Barossa from Wiltshire in 1855. Their son, Meshach, was the first winemaker in the family. Grant founded his cellar in 1988 and since the start, the aim has been to make wines of the finest quality. The gloriously rich and lavish Holy Trinity uses the three main grapes of Châteauneuf-du-Pape, hence its name. Aged in different-sized, seasoned oak barrels, its dark, rich and spicy. Open early and decant or, ideally, cellar. A great red with slow-cooked lamb shanks to show off all its deep, velvety fruit flavour.
