Snappily dressed, immaculately coiffed, ‘Monsieur Paul’ looks more at home in Saint Tropez than overseeing his winery, as he’s done for the past 75 years. Now in his 90s, he started when he was 12, during World War II. Many of his vineyards are around the classic Provençal village of Correns, which shot to fame for becoming entirely organic. The fact that Brad Pitt and Angelina Jolie bought its star attraction, Château Miraval, also helped to put Correns on the map. But even Hollywood stars can’t overshadow the wines of this area, and wine buyers worldwide are clamouring for Provence style pinks like this. With its refreshing, red berry fruit and its spicy, structured finish, this is a very versatile food wine and a mouthwatering aperitif.
