The Story Behind the Bottle
Tio Pepe’s En Rama is nicknamed ‘wild and alive’. That’s because these are sherries ‘in the raw’ so to speak, still alive with intricate yeasty flavours that give the golden liquid its richness. In the spring, when the yeasts are at their strongest, ‘wines’ are carefully drawn from the casks. Winemaker Antonio Flores sweeps through the cellar, sampling all the Finos and selecting a mere 100 botas (casks) with potential to make it into the final selection. He narrows that down to 60, then blends them. There is no filtration or fining, preserving all those wonderful flavours. The sherry is given time to settle before bottling. Flores describes his Tio Pepe En Rama as “fragrant, intense, brilliant, salty and immaculate”. Great with seafood.
