The Story Behind the Bottle
From a family long established in Chablis, Samuel Billaud started his winemaking career at the Domaine Billaud-Simon in 1985. After a 5-year dispute with his uncle and too much family politics, he decided in 2009 to set up on his own. He started out by buying in top-quality grapes, before inheriting some prized Premier Cru vineyards from his father. Today, he has carved out a reputation as a leading figure in Chablis. This is his high-quality, good-value Petit Chablis from vines above two superb Grands Crus. Organic farming, early picking, minimal use of oak and long lees ageing lend a richness and breadth to the wine, whilst retaining a core of intensity and freshness. Open early and decant for drinking now or keep. Superb with seafood.
