Flavour Profile
Lying on the Parnay plateau, at the heart of the Loire’s prestigious Saumur-Champigny region, Château de Targé has been in the Pisani-Ferry family since 1655. Paul P-F took over in 2017 to continue the family heritage and breathe into it a new lease of life.
He immediately started converting the vineyards to be fully organic, so they would last another three centuries! He has reintroduced biodiversity, planting trees and different vegetation to attract the 'good' insects and deter the unwelcome ones. All the vineyards are centred around the 11th-century Eglise du Parnay, and are planted on the prized tuffeau soil – limestone rock that was created over 90 million years. This lends complexity and minerality to the wines made from the region's hero varieties, Chenin Blanc and Cabernet Franc.
Paul has wide experience, working in California, Stellenbosch, Mendoza and Sonoma, so brings a modern approach to his winemaking. Pavillon de Targé is a pure, crisp Chenin Blanc with ripe lemony fruit and a mineral freshness. Chill down and serve with fish, creamy chicken or savoury stuffed pancakes.
