The Story Behind the Bottle
Presbytère is the name of the 12th-century building next to the village church which once housed the monk’s small winery. It’s where Presbytère was originally made, all by hand. Today, it’s crafted in La Clarière’s immaculate new cellar. The wine is only made in top vintages, all the grapes taken from a superb terraced vineyard about the château. Ploughed by shire horse, it’s special because of its terroir and because all the vines come from cuttings taken from the original, century-old Presbytère vineyard. The wine is pure Cabernet Sauvignon – unheard of in Castillon – selected bunch by bunch, then berry by berry. Aged in finest new oak and in clay amphorae, it offers intense fruit, power and oak nuances. Open early and decant or cellar.
