Flavour Profile
Among the south-facing slopes of prestigious Stellenbosch lies the boutique winery Journey’s End. Its vineyards lie closest to the ocean and benefit from cooling breezes, which accounts for the pristine freshness of their wines. Owned by Rollo Gabb, the estate not only makes a small range of outstanding wines, but is also very community minded, building a school, a creche and much more.
Their Sixty Barrels Chardonnay uses coastal-cooled grapes from just outside Stellenbosch. Wild yeasts, fermentation in French oak barrels, lees stirring and ageing in cask – all the techniques used for creamy Burgundy – this toasty, spiced wine has a tasty balance of ripe fruit and rich oak. A white to savour with salmon en croûte or chicken.
