The grapes selected for Fossilbed Sauvignon Blanc 2025 are from vineyards planted in the ancient soils of the Limestone Coast. Stretching from the Victorian border to the Younghusband Peninsula in South Australia, the Limestone Coast is one of Australia's most versatile wine growing regions.
Settled since the early 1840s, much of the region was submerged by sea as recently as two million years ago. The deep limestone deposits created by coral and ancient sealife are now home to Australia's most important source of fossils and it’s classified as a World Heritage site.
They also transfer this rich minerality to the grapes grown above them, giving this handcrafted Sauvignon Blanc a vibrant character with zingy citrus and bright kiwi fruit flavours. Delicious solo, it’s also great with grilled white fish, prawns and herby chicken dishes.
