Servin makes “Chablis fanatics will die for” (Wine Spectator). This former 1er Cru vineyard was abandoned during World War I and lost its status, though clearly not its quality. The family replanted with their best cuttings to create this top cuvée.

The Wine
Les Pargues is a vineyard that sits between the treasured Premier Cru sites Montmains and Vaillons. It was abandoned during World War I but over the last 50 years the Servin family have restored it to its former glory. Key to this resurgence is ‘Sélection Massale’, a technique used to transplant cuttings from the finest old vines. Many vines propagated in this way are now reaching maturity and yielding grapes of superb concentration. Add nearly two centuries of Servin winemaking expertise and you have a wine of Premier Cru quality – but at a lower price. Exceptional depth and freshness with honeyed minerality and a wonderful structure that will enable it to age for a year or two more. Serve lightly chilled with sea bass or oysters.
