The Wine
In the heart of Sancerre’s Sury en Vaux lies Domaine Michel Thomas, a family-run estate spanning 17 hectares. Known for consistently outperforming their peers, they have won over 45 awards in the last decade. Their finest vineyards are planted on Silex soils, boast a perfect, sunny aspect and are littered with pieces of flint, said to impart the wine with hallmark ‘pierre à fusil’ (gunflint) aromas. Meticulous grape selection and traditional winemaking ensures a well-balanced wine with ripeness, crisp minerality and beguiling complexity. This wine was bottled unfiltered to ensure maximum flavour, so a light, natural deposit may appear in the bottle. Let it stand for a few hours, then pair with seafood, goat’s cheese salad or soufflé.
