Put simply, this approach takes organic farming to the next level and encourages biodiversity in the vineyard to help strengthen the vines. This results in a purer expression of each individual plot, putting a more delicious – and unique – wine in your glass. Les Marconnets is a Premier Cru straddling Beaune and Savigny. Densely planted, steep slopes, iron-rich soils all play their part in making this beautifully nuanced Burgundy. In the cellar, 30% whole bunch fermentation, wild yeasts and ageing in a third new oak add considerable complexity too. Open early and decant.
