The Wine
Le Vieux Serestin is very proud to have been included in the ‘cru artisan’ classification, set up in 2005 to draw together properties committed to sustainable agriculture. The wines are judged every year by a tasting panel. The Caster family took over the estate in 1982, recognising that the property needed serious investment. They grubbed up the vines and completely replanted them, matching clones to soils. Nearly half is Merlot, with equal Cabernet Sauvignon, plus a few rows of Petit Verdot and Cabernet Franc. Then they turned their attention to the cellars and château. Traditionally fermented, the wine is aged in one or two-year old barrels for six months to lend gentle oak complexity. A firm, well-structured claret best decanted early.
