Founded in 1830, Joseph Drouhin has been a byword for top-quality Burgundy for over a century. Run today by the founder’s four grandchildren, they have a magnificent portfolio of vineyards that extend from Chablis in the north to the Mâconnais. They are firm believers in organic and biodynamic viticulture, which they converted to in 1993. It's part of a philosophy of meticulous attention to detail throughout their range. This fine, Premier Cru Chassagne was gently pressed and fermented in barrel using wild yeasts before being aged for 12 months in fine French oak, 25% of that new. Drinking beautifully now, it’s best opened early and served cool in large-bowled glasses, so you can swirl the wine. Alternatively, cellar it a little longer.
