Grilled Tofu Skewers with Peach Glaze & Herb Salad

Ingredients:
- 400g firm tofu
- 2 peaches, cut into wedges
- 1 tbsp honey
- 1 tbsp lemon juice
- Olive oil
- Salt and pepper
- Mixed soft herbs (parsley, mint, basil)
Method:
- Thread cubed tofu and peaches onto skewers.
- Mix honey, lemon juice, and a little oil for glaze.
- Grill skewers, brushing with glaze as they cook.
- Serve with a simple herb salad on the side.
