Cabernet Sauvignon is the hero of Bordeaux, anchoring famous clarets like Château Lafite and Château Latour. But it is increasingly impressive in regions as far flung as California, Australia's Coonawarra, Chile and Argentina - where it ripens fully. The thick skin deepens tannin and colour, making it ideal for cellaring. Expect black fruits - blackcurrants and black cherry in particular, often with mint or pepper characters.
