Very citrusy - lemon and orange zest – with coriander, thyme, juniper

The Spirit
We make a superb, award winning fizz from the great grapes of Windsor Great Park Vineyard. However, in the excellent and bountiful 2018 vintage, we had a little Chardonnay spare. In Champagne, they would distil into a marc de Champagne. We decided to be very British and distil it into a very special gin. Well, we had all we needed right on the doorstep. Next door to the vineyard is Savill Gardens, the only privately owned Royal Garden open to the public all year round. It's full of pungent seeds, flowers and leaves. We searched out the best nose in the business, with a PhD in gin, to advise us and this is the delicious result. Juniper, lemon verbena, thyme, elderflower, with a hint of pear and malty oak from the Chardonnay. A delight.
