The Wine
Swirl and look at the 'legs' as they langorously slip down the glass. This is an amazingly unctuous, sweet and luscious sherry made purely from Pedro Ximénez. The grapes are picked when really ripe, then left to dry in the hot sunshine that Jerez, southern Spain, is blessed with. That ensures each berry shrivels up, so when the grapes are finally crushed there is very little juice and lots of sugar. It's difficult to ferment at that intensity, but the team at Gonzalez Byass are very experienced. Treacle, toffee, dates and toasted walnuts – it's all in there. A glassful that rewards sniffing and sipping very slowly. A terrific choice with treacle tart, sticky toffee pudding or, come Christmas, with the traditional pud.
