In the remote town of Thurso, on Scotland’s northernmost coast, a new distillery is quietly releasing small batches of handcrafted single malts. And they’re very, very good indeed. This beguiling bottle, Aurora, is a tasty addition to Iain Kerr’s Wolfburn project. His young team takes an unhurried approach, fermenting the mash slowly and distilling the spirit gently. The whiskies are never chill filtered, and they don’t add any colouring. Instead they rely on the barrels to imbue flavour and colour. For Aurora, 40% of the spirit is aged in second fill quarter casks, 40% in first fill bourbon casks, and 20% in Oloroso sherry hogsheads. Resulting in the masterly blend of sweetness and spice that makes Aurora such a fine fireside sipper.
