Winemaker JMS – Jean-Marc Sauboua – was born and raised among the vineyards of Bordeaux. Having trained in the cellar of a First Growth château, his standards are exceedingly high, and he won his first Trophy for a Sauvignon Blanc back in 1995. At Le Chai au Quai (our fine wine making hub in Castillon), Jean-Marc created this “super Sauvignon in Burgundy style”. Sourcing top grapes from across Bordeaux, he fermented the wine in barrel, lees aged it and encouraged what pros call the ‘malo’ – a natural process that turns ‘green’ malic acid into creamier notes. The result is a minerally, crisp, lemony Sauvignon with ripe, peach fruit, a round texture and richness due to the warmth of 2018. A serious choice for sauced white meats or fish.
