Piero Antinori may be best known for his Super Tuscan Tignanello, but he also makes this superbly complex, rich, Burgundian style white. It's a barrel fermented Chardonnay and Grechetto from Umbria in fact, from the Castello della Sala estate that was built by the Monaldeschi della Cervara family in the 14th century. The Antinori clan purchased the property in 1940 but did not release a vintage of Cervaro della Sala until 1987. The first winemaker was the renowned Renzo Cotarella, who grew up near the Castello and led the modern revolution in Umbrian wines. Cervaro is a real star of the region and regularly receives well over 90 points from Wine Advocate. Serve with Umbrian classic, stuffed guinea fowl, or a rich chicken and mushroom dish.
